I could LIVE on this! My Roasted Beet,
Radish and Herb Coated Goat Cheese salad!
SO simple, SO earthy, SO DIVINE!
Just LOOK at that luscious color!!! #NoFilter!
Ruby red and gorgeous golden beets
peeled, drizzled with good olive oil, sprinkled with S & P and
a smattering of fresh herbs (oregano) just plucked from our kitchen garden!
Bake it all in a foil pouch at 375 degrees for 30 minutes.
That’s it!
In a bowl for one ~
Add: plump, crisp radishes for crunch…
and fresh herb coated goat cheese for tang…
(try oregano & chive)
add a handful of baby spinach and arugula leaves and then
layer on a a bit more EVO, S & P, fresh lemon juice & zest and…
DIVE IN!
