Peach Pizza with fresh basil and herb goat cheese - Monica Hart

 

This pretty little pizza is nothing short of peachy!

It’s on the dinner menu at my house today and it can be on your

menu too – in minutes!

It starts with amazing ingredients: sweet white peaches, creamy home roasted

garlic, fresh basil, herb goat cheese, plus a smattering of lemon zest…ALL layered onto

store purchased pizza dough and baked off just before serving! 

Okay, I have a thing  for white peaches. My Italian born grandmother Nettie,

had a white peach tree in the garden of her Seattle home. I can still remember

picking fresh, ripe peaches straight off the tree! {LOVE}

Anywho…

Here’s the easy how-to for my delish fresh peach pizza.

You ready? Turn the oven on to 400 degrees!

 

Drizzle a little olive oil on the store purchased dough and spread it out on a

pizza pan to rest. Meanwhile…roast the garlic.

Cut off the top of a head of garlic and drizzle it with a bit of olive oil.

{I’m in love with my garlic roaster…but you can simply use foil.}

Pop the garlic in a foil pouch and roast it for about 30 minutes at 400 degrees. Allow it to

cool a bit before handing.

As the garlic is roasting and the dough is resting, slice one large peach,

tear several pieces of fresh basil and get about 2.5 ounces of

 herb goat cheese ready to go.

Squeeze the softened roasted garlic out of the skin, into a bowl and mash it

with a fork.

Slather the dough with 1/3 of the garlic, layer on the sliced peaches, torn

fresh basil and torn herb goat cheese. Drizzle with a bit of olive oil and

Balsamic vinegar and then hit it with a little lemon zest and coarse salt.

Bake at 400 degrees for about 14 or so minutes until the the crust is

golden brown and the cheese is oozing.

Drizzle on a bit more olive oil if you like and hit it with salt and pepper.

Serve with a glass of Rosé wine and

enjoy!
