We were first & ten from our own 20 with this cool
Huckleberry Martini Drop cocktail tray! Sweet!
We gained more yardage with the MAIN tailgate course…my delish
roasted pork tenderloin brioche bites with all the fixings!

And now we’re sustaining our drive with a super FRESH & healthy Tailgate Chips & Dip combo…
without forgoing flavor!
SCORE! Check out my grilled corn & avocado salsa with whole-wheat pita chips!
I’m turning up the taste with: spicy cumin grilled fresh corn on the cob,
avocado bathed with lemon juice and sprinkled with
citrusy lemon ZEST, diced red onion, just plucked tomatoes from our kitchen garden,
red bell pepper, jalapeno, fresh chives and olive oil. In a word –
YUM!
As for the chips….I’m going with super healthy whole-wheat pita triangles, brushed with
olive oil and French salt and baked in the oven at 350 degrees for 10 to 12 minutes.
{Keep an eye on them so they don’t burn!!}
I’m SO loving the tailgating tote-ability of personal portions, in handy
wax paper bags you can toss/recycle when you’re done!
Here’s what you will need!
To a bowl add:
* Two ears of corn, brushed with olive oil & sprinkled with cumin and S & P
then grilled. Remove the kernels with a knife
* 1/2 a red bell pepper diced
* 1 avocado drizzled with a little fresh
lemon juice and sprinkled with the zest of one lemon and diced
* 1/2 a red onion
* 6 cherry tomatoes cut into quarters
* 2 teaspoons Jalapeno peppers finely diced
{If you like it HOT, you’ll need to call an audible! }
* A few freshly snipped chives
* A few glugs of good olive oil
* The juice of one lemon
* Salt & pepper to taste
Toss together and serve alongside the baked whole-wheat pita triangles!
Talk about FRESH and this chip & dip combo is a super healthy
