Root Vegetables
I Love earthy, r-o-o-t vegetables, especially,
this time of year. I love how they grow, out of view…
sucking energy from the earth, each
harvest, a bit of a surprise.
Finally got around to
harvesting our little carrot patch,
(and I mean little)
the dirt still clinging…
After a quick rinse and
trim, the baby carrots are ready for
a hot bath. Just a few
minutes, for the little darlings.
Then, it’s time to
dress them.
Drizzle on a little olive oil; add
salt and pepper, the zest and juice of
half an orange and some
chopped fresh rosemary, from the garden or any
fresh herb, you favor.
Crank up the oven to 400 degrees and roast for a
Good 25 to 30 minutes or until the vegetables become
softened, brown and caramelized. You
may have to turn down the heat, if they brown too
Quickly. Drizzle them with a little more
olive oil and orange juice and serve.
A simple holiday side dish or I
could simply, make a
meal of it!
