few of my simple tailgate entertaining essentials starting with a fab cocktail!

Okay, we’ve  pulled together a fun tailgate cocktail tray and

 poured our delish Huckleberry Martini Drop  tailgate

 cocktail with purple sparkles rockin’ the rim!

Now it’s time for the MAIN event!

This Brioche bite tray is so yummy and so SIMPLE to pull

together and it’s easy to tote to the game.  The flavor explosion starts with my

roasted pork tenderloin with toasted spices. Toasting only takes a few minutes and

it is SO worth the extra effort! I’m telling ya, roasting & toasting  brings out the best in everything!

Here’s the HOW TO:

Add a few tablespoons each of coriander and cumin to a dry skillet and toast on the

stovetop on medium-high for a few minutes until the spices darken up a bit. Cool.

{BTW, Your kitchen will smell wonderful!}

Coat the pork tenderloin in the spices, generously drizzle with good olive oil and hit it with a bit of

soy sauce. Roast in the oven at 350 degrees for  about 30 minutes until the pork juices run clear.

 Slice thinly. You can see the flavorful coating…mmmm.

Now, add the fixings!

* Roasted red peppers – roast your own or pick them up at the market.

* Goat cheese rolled in chopped fresh herbs, drizzled with olive oil and sliced into pats.

{I picked parsley, oregano, thyme and chives from our kitchen garden.}

 * Peppery arugula!

Drizzle the brioche bun on both sides with good olive oil,

spread on a little honey mustard and layer on the pork and fixings.

Wax paper bags are great, trimmed up and rolled down.

The brioche bite colors are gorgeous and the taste is yummy.
